Meal Prep Monday…on Tuesday

I’m a day late but…here we go!

Meal Prep Monday 
1. Vegetable and Avocado Enchilada / 2. Slow Cooker Pepperoni and Chicken / 3. Some kind of salmon concoction that i’ll throw together last minute
Can I use the fact that my birthday is friday as the reason I have this pitiful meal plan before you? No? Okay. I’ll do better next week. 
The veggie enchiladas are delicious. Tina provides helpful information on the nutritional makeup of this meal and the nutritional breakdown. Just schedule leg day around these guys…they’re worth it! 
I just got hip to Skinnymom.com a few weeks ago and am loving their recipes so far. I’m hoping that the pepperoni chicken is another winner. Winner, winner, chicken dinner? I took it out of the crockpot at midnight so I havent had a chance to try the cheesy goodness. I’m thinking that covered and smothered in cheese means it’ll be delightful. Ha! Don’t be afraid to try this one because the nutritional information will probably surprise you…in a good way. Also, skinnymom.com isn’t a sassy, all mamas need to look a certain way type of website. Their tag line is “where moms get the skinny on living healthy”. Just wanted to throw that out there because I don’t endorse shaming of any kind here.

I’m going to whip together some sort of baked salmon towards the end of the week. That’s my plan anyway. I just need to get myself together. And stop fantasizing about birthday cake. Don’t worry! I haven’t forgotten about your surprise. It’s coooming! Still not an iPad so don’t get too excited.

Monday Meal Prep: Clean Eats

 1. Crockpot Chipotle Burrito Bowls/ 2. Black Bean Salad with Corn, Red Peppers, Avocado & Lime Vinaigrette / 3. Spicy Spinach & Udon / 4. Spicy Toasted Chickpeas / 5. Cheesy Cauliflower Pizza Bites

Yesterday was spent in the kitchen but our meals are prepped for the week. We’ll probably end up making one more meal by Thursday because Mike is going to start lifting weights again tonight! When you lift more, you eat more. (Woo hoo! I got my workout buddy back!)

We did some taste testing last night and Harper’s favorite meal so far is the udon. For her, I cut up plain updon (without the red pepper) and squeezed lemon juice on the noodles with a little bit of lo-so soy sauce. She could not get enough of it. Our goal is to expose her to many different types of food so that her palate is diverse. She eats what we eat and rarely refuses what we offer. I still cant get her to eat butternut squash though.

I’ll do my best to photograph our meals next week but after cooking all day with a sprained wrist…pictures were not on my mind. Ha!

I Eat My Veggies and Drink ‘Em Too: Smoothie

The more I read the news, the angrier I get. I’m pissed irritated with companies that decide to use chemicals and meat that isn’t fit for human consumption in their food products that are consumed by humans. What the huh?! While I may not eat at those places, other people who are on health journeys go there. And take their children! I cringe at the thought of The Biggest Loser competitors eating those subs because they were told they were healthy options. Just no.

For the past few months, I’ve been looking into holistic living. Today, I’m not prepared to dive into the lifestyle head-on because its a lot of work. Totally worth it in my opinion…but baby steps. Remember, a lifestyle change does not happen overnight its a process.

I’m armed with recipes and psyched for our next trip to the market. Its time to whip up some body butter and conditioner. Oh, food too!

Once recipes have been tested…I’ll share them with y’all! I already have a couple of DIY hair moisturizers ready to be photographed.
